RECIPE: Orange & Berry Bran Muffins
These are an ideal snack to have in your bag when you're on the go or at work - packed full of fibre, omega 3 & 6, and fresh fruit, these muffins are healthy, taste great, and are low G.I. - better for you than cereal bars that are full of simple sugars.
25g wheat bran
30g All-Bran/Bran Flakes
125ml boiling water
250ml buttermilk
5 tbsp Splenda/similar
4 tbsp vegetable oil
1 free range egg
1 tbsp orange squash concentrate
1 tbsp vanilla extract
125g wholemeal flour
75g ground flaxseed
1 tbsp bicarbonate of soda
1 tsp cinnamon
1/2 tsp ground ginger
225g fresh chopped berries, e.g.
cranberries, strawberries
1. Preheat oven to 200'C. Mix bran and cereal in a large bowl, stir in boiling water to moisten, then let cool for 5 mins. Then mix in buttermilk, sugar substitute, oil, egg, orange juice & zest, and vanilla.

2. In a separate bowl mix flour, flaxseed, bicarbonate of soda, cinnamon, ginger and salt; then mix in berries. Now add whole mix to the bran mixture in your other bowl, stirring until just combined.

3. Divide mixture into 12 muffin cups. Bake for about 25 mins, or until a fork inserted in centre comes out clean.

Storage - these will keep at room temperature for 2 days, or for up to a month in a resealable plastic bag in the freezer.
